Freshly made salad dressing offers great flavor as do this chunky mango yogurt salad dressing. It’s simple to make, easy to make, and wonderfully healthy. The sweet mango is complemented with red onions and chili peppers and then held together with plain non-fat yogurt. A splash of fresh lemon juice brightens all the flavors in the dressing. Then serve it over a wedge of lettuce.
Beware. If you keep tasting this chunky mango yogurt salad dressing, you may not be able to stop. There won’t be enough to spoon over a lettuce wedge.

1/2 cup plain yogurt, non-fat
2 teaspoons white wine vinegar
1 teaspoon fresh lemon juice
1/2 ripe mango, cubed
1 Tablespoon red onion, finely chopped
1 teaspoon chili pepper
Salt and pepper to taste (optional
2” cut lettuce wedges sufficient for the number of servings
Mix well the first 3 ingredients. (Taste and, if needed, adjust flavors to suit you. If adding salt and pepper, do so at this step.) Lightly stir in remaining ingredients.
