This bacon, egg, and avocado sandwich was inspired by an image I saw in a Williams Sonoma magazine. It stated that the recipe was on its website; however, I was unable to find it. I was very disappointed because I really want to try it. So in my version, I substitute toasted everything bagel for the bun with a layer of Miracle Whip.
My Recipe Version
1 Everything bagel, sliced and toasted
Miracle Whip or mayonnaise
1 half Hass avocado, sliced
3-4 sliced of fried bacon, cut in half
1 large egg, fried sunny side up
Salt and pepper to taste (optional)
lemon juice to coat avocado sliced (optional)
Paprika to garnish fried egg
Spread Miracle Whip on both the top and bottom sides of the toasted everything bagel. Pile on as much baby arugula as you like. Spread lemon juice on the sliced avocados. This is optional but the lemon juice keeps the avocado from turning dark, as well as add a lovely bright flavor to the sandwich. Pile on the fried bacon halves. Top with the sunny side up fried egg. If desired, salt and pepper to taste. Garnish with a light sprinkle of paprika.
Cut in half and ENJOY!
