For this chunky shrimp and blue cheese dip, you may need to include a spoon to help with the dipping. It’s loaded with chunky shrimp and blue cheese bites. Made with sour cream and lots of garlic, it’s very easy and quick to make. Give it a quick chill for a couple of hours before serving. I had served the dip with potato chips which added to a more salty flavor. For less salt, serve with no-salt potato chips or crackers can be served just as well.
And of course, the dip compliments a nice cold beer!
The shrimps are steamed and then chopped into 1/2” bite sizes. A perfect blue cheese is also chopped in 1/2” bite sizes but with some of it chopped down to 1/4” or just reduced to a crumbly texture.
Yields about 1-1/2 cups
8 ounces chopped steamed shrimps, cleaned (washed, shells removed and deveined) plus a few whole steamed shrimps for garnish
2-1/2 to 3 ounces blue cheese, chopped
8 ounces sour cream
1 Tablespoon mayonnaise
3-4 garlic cloves, minced
3 Tablespoons spring green onions, green part of the onions thinly sliced
white pepper and salt to taste
Thoroughly mix the last five ingredients. Gently stir in the shrimps and blue cheese.
If you’re starting with raw shrimps, steam them for three (3) minutes, definitely more than four (4 minutes). Chop the shrimps to 1/2” bite sizes. Chop the blue cheese also into 1/2” bite sizes. But feel free to chop into 1/4 sizes and crumble some of it. You can also use pre-crumbled blue cheese. Salted potato chips really bring a lot of salt to the taste buds because the blue cheese is already salty. So you may want to serve with non-salted potato chips or crackers.
