Ever have cravings for just a quick lunch that has great flavors? Looking for a light sandwich idea? Being a busy food photographer and food blogger, I find that I’m often hungry. But I don’t get eat until after the shooting is done—and the food is cold! This open-faced tomato and goat cheese sandwich is one of my quick go-to lunches or snack.
The bread is buttered and grilled, goat cheese is spread on it and the rich flavor of a slice of an Heirloom tomato is added. Sunflower seeds are added for a lovely crunch.

Suggested tools: Stovetop griddle skillet
2 slices of a favorite nutty bread (I used toasted sunflower honey loaf)
1 slice of medium size Heirloom tomato, sliced thick and cut in half
1/3 cup or more goat cheese
1 teaspoon butter
2 teaspoons or more sunflower seeds
2 spring onion, washed with ends cut, for garnish
Butter the sliced bread and grill on a griddle skillet until brown. Spread goat cheese on each slice. Top with a halved heirloom tomato and then sunflower seeds. (Add more flavor and toast the sunflower seeds or purchase toasted sunflower seeds.) Garnish with a spring onion.
