Like the classic potato, a small fingerling shaped potato has a buttery mild nutty flavor.  There are many other ways to prepare these small 2-3 inch long potatoes but roasting really entensifies their flavor.  Fingerling potatoes are little more expensive than regular potatoes but they're well worth the treat.

Don't confuse a fingerling potatoe with a new potatoe.  Fingerlings are a heritage cultivar and are naturally small and fully mature when harvested.  It's name, of course, comes from it shape resembling a finger.  There are four varieties:  the yellow-skinned Russian Banana; the pink-skinned with a yellow flesh referred to as French fingerling; a purple Peruvian; and the Swedish peanut fingerling.  (from Fingerling potato Wikipedia)

Roasted Fingerling Potatoes

Like the classic potato, a small fingerling shaped potato has a buttery mild nutty flavor. There are many other ways to prepare these small 2-3 inch long potatoes but roasting really entensifies their flavor. Fingerling potatoes are little more expensive than regular potatoes but they're well worth the treat.

ingredients:

  • 1 pound fingerling potatoes
  • 2 Tablespoons 100% virgin olive oil
  • 1 Tablespoon unsalted butter
  • 3 large fresh garlic cloves, smashed
  • 1/8 teaspoon cayenne pepper
  • Salt generously
  • Black pepper, ground to taste
  • 2 sprigs fresh rosemary (optional)

instructions:

  1. Pre-heat oven 400 degrees F
  2. In a sauce pan over low heat, add olive oil, garlic and rosemary.  Cook for 5 minutes and turn off heat.
  3. Scrub and rinse fingerling potatoes.  Pat dry and cut fingerling potatoes in halves lengthwise.
  4. Add potatoes to the oil in the sauce pan.  Add cayenne pepper and salt generously.  Evenly toss potatoes in the oil, ensuring that every potato is well covered.  
  5. Spread potatoes cut side down on a baking sheet.  Pour any remaining oil over the potatoes.
  6. Place the baking sheet on the middle rack of the oven.  Bake for 20 minutes.  Remove sheet from the oven, turn potatoes over.  Return the sheet to the oven placing it on the top rack.  Continue baking for 10 minutes, until potatoes are tender.
