This is one of the best and easiest classic vanilla pudding I've ever had. Inspired by the original recipe from Mr. Food, I used real vanilla beans rather than the extract. And then of course, I dressed it up a bit with fruits.
Ingredients for Best Classic Vanilla Pudding:
3/4 cup sugar (I used 2/3 cup to cut down on the sweetness)
3 tablespoons cornstarch
1/8 teaspoon salt
2 cups milk
2 large egg yolks
1 tablespoon butter
1/2 fresh vanilla bean (or 1-1/2 teaspoons vanilla extract)
Combine sugar, cornstarch and salt in a medium saucepan. Whisk milk and egg yolks in a bowl. Then gradually stir liquid mixture into the saucepan.
Cook over medium heat 8 to 10 minutes or until mixture thickens and is bubbling. Whisk or stir with a wooden spoon continuously. Remove from heat and stir in butter and vanilla beans. Using a strainer, pour the pudding into individual serving dishes or a large bowl.
Cover with plastic wrap directly on the surface of pudding (so that the top does not dry out) and refrigerate 4 hours or until firm.
